Our story

A den in the old Canal Zone

Manigordo was started by two people who grew up in this corner of Panama, among the jungle, the ships going through the Canal, the railroad and the planes out of Albrook. We wanted a place that told that story in every detail.

The name

The manigordo comes out at night

That's what Panamanians call the ocelot: a mid-sized wild cat, a solitary night hunter that lives anywhere from lowland jungle to mountain forest. It's one of the most depicted cats in pre-Columbian art across the Americas.

We chose it because it is from here, because it comes out when the sun goes down, like us, and because today it needs our care.

The portraits in the dining room aren't decoration: they're our ambassadors. Four real ocelots living under care at Summit Gardens and in Buenaventura, photographed by wildlife photographer Eduardo Estrada.

Every time someone asks about them, we remember that the cats are still out there, in our forests.

The railroad tracks run right past Manigordo. When the train sounds, everybody toasts.

So we made it a thing: at Happy Hour, Tuesday to Friday from 5:00 to 7:00 p.m., order a beer while the train goes by and it's half price.

The other neighbors

One day a sloth showed up

In November 2024, before we opened, a two-toed sloth climbed the fence next door and nobody could get it down. With help from a vet at Summit Gardens and Panama's wildlife authorities, it went back to its forest.

That's Cárdenas for you: the jungle starts where the parking lot ends.

The house rum

Casa Barú, a neighbor from Chiriquí

Our house rum is Casa Barú, a distillery run by friends up in the highlands of Chiriquí. Almost every wild cocktail we pour is built on their rum, and we host tastings together.

In June 2025 we hosted the launch of Manigordo Rye Touch here, a special edition by Casa Barú honoring the cat we are named after.
